  • 2 bell peppers, tops cut off and seeds removed

  • ½ pound ground beef

  • ¼ cup cooked rice

  • 2 tablespoons diced tomatoes with juice

  • 1 tablespoon shredded cheese (plus more for topping)

  • ½ teaspoon Italian seasoning

  • Salt and pepper, to taste

Directions

  • In a mixing bowl, combine the ground beef, cooked rice, diced tomatoes with juice, 1 tablespoon of shredded cheese, Italian seasoning, salt, and pepper.
  • Stuff each bell pepper with the beef mixture and place them upright in a 3–4 quart slow cooker.
  • Cover and cook on low for 5 to 6 hours, or until the beef is fully cooked and the peppers are tender.
  • Top with additional shredded cheese just before serving.
