Ingredients
1 lb ground beef
1 small onion, diced
3 cloves garlic, minced
4 cups beef broth
1 can diced tomatoes, undrained
2 cups shredded green cabbage
2 medium carrots, sliced
1 medium russet potato, diced
1 tsp salt
1/2 tsp black pepper
1/2 tsp smoked paprika
1/2 tsp dried thyme
1/2 tsp dried oregano
1 tbsp Worcestershire sauce
1 bay leaf
Directions
- In a skillet over medium heat, brown the ground beef with the diced onion until the meat is fully cooked. Drain excess grease and transfer to the crockpot.
- Add the minced garlic, beef broth, diced tomatoes, shredded cabbage, carrots, potato, salt, pepper, smoked paprika, thyme, oregano, Worcestershire sauce, and bay leaf to the crockpot.
- Stir everything together, cover, and cook on low for 6-8 hours or on high for 3-4 hours.
- Before serving, remove the bay leaf and give the soup a good stir. Taste and adjust seasoning if needed.
- Ladle into bowls and enjoy with crusty bread or crackers for a cozy meal.
