  • 1 lb ground beef

  • 1 small onion, diced

  • 3 cloves garlic, minced

  • 4 cups beef broth

  • 1 can diced tomatoes, undrained

  • 2 cups shredded green cabbage

  • 2 medium carrots, sliced

  • 1 medium russet potato, diced

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1/2 tsp smoked paprika

  • 1/2 tsp dried thyme

  • 1/2 tsp dried oregano

  • 1 tbsp Worcestershire sauce

  • 1 bay leaf

Directions

  • In a skillet over medium heat, brown the ground beef with the diced onion until the meat is fully cooked. Drain excess grease and transfer to the crockpot.
  • Add the minced garlic, beef broth, diced tomatoes, shredded cabbage, carrots, potato, salt, pepper, smoked paprika, thyme, oregano, Worcestershire sauce, and bay leaf to the crockpot.
  • Stir everything together, cover, and cook on low for 6-8 hours or on high for 3-4 hours.
  • Before serving, remove the bay leaf and give the soup a good stir. Taste and adjust seasoning if needed.
  • Ladle into bowls and enjoy with crusty bread or crackers for a cozy meal.
