Ingredients
3 lbs beef chuck roast
1 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp smoked paprika
1 cup BBQ sauce (your favorite brand)
1/2 cup beef broth
2 tbsp Worcestershire sauce
2 tbsp brown sugar
1 tbsp apple cider vinegar
1 tbsp Dijon mustard
1/2 tsp liquid smoke (optional, but adds great depth)
6 sandwich buns
Coleslaw (optional, for serving)
Directions
- Season the chuck roast with salt, pepper, garlic powder, onion powder, and smoked paprika.
- Place the roast in the slow cooker and pour in the BBQ sauce, beef broth, Worcestershire sauce, brown sugar, apple cider vinegar, Dijon mustard, and liquid smoke.
- Cover and cook on low for 8 hours or until the beef is fall-apart tender.
- Shred the beef with two forks and stir it back into the sauce. Let it sit for about 10 minutes to absorb all the flavors.
- Toast the sandwich buns if desired, then pile the BBQ beef onto each bun.
- Top with coleslaw for a crunchy contrast, or serve as is with extra BBQ sauce.
