Ingredients
4 boneless, skinless chicken breasts
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon Italian seasoning
½ teaspoon red pepper flakes (optional)
3 cloves garlic, minced
½ cup sun-dried tomatoes, chopped
1 cup chicken broth
1 cup heavy cream
½ cup grated Parmesan cheese
1 tablespoon cornstarch (optional, for thickening)
2 cups fresh spinach
¼ cup fresh basil, chopped (optional)
Directions
- Season the chicken breasts with salt, pepper, Italian seasoning, and red pepper flakes.
- Place the chicken in the crockpot and add the minced garlic, sun-dried tomatoes, and chicken broth.
- Cover and cook on low for 4-5 hours or until the chicken is tender.
- Stir in the heavy cream, Parmesan cheese, and cornstarch (if using). Let it cook for another 15-20 minutes until the sauce thickens.
- Add the spinach and stir until wilted.
- Garnish with fresh basil and serve over pasta or rice.
