Ingredients

  • 1 lb ground beef

  • 1 cup uncooked rice

  • 2 cups beef broth

  • 1 can diced tomatoes (14.5 oz)

  • 1 cup shredded cheddar cheese

  • 1 onion, chopped

  • 1 teaspoon garlic powder

  • Salt and pepper to taste

Directions

  • Preheat your oven to 350°F (175°C).
  • In a skillet, brown the ground beef with the chopped onion until fully cooked. Drain any excess fat.
  • In a large bowl, combine the cooked beef, uncooked rice, beef broth, diced tomatoes, garlic powder, salt, and pepper.
  • Transfer the mixture to a greased baking dish and cover with aluminum foil.
  • Bake for about 30 minutes, then remove the foil and sprinkle cheese on top. Bake for an additional 10-15 minutes until the cheese is melted and bubbly.
