Easy Keto Chicken Stir Fry (One-Pan Dinner)

Ingredients
1 lb boneless, skinless chicken breast, sliced thin
1 tablespoon olive oil or avocado oil
3 cups frozen stir-fry vegetable mix (no carrots or corn)
2 tablespoons coconut aminos or low-sodium soy sauce
1 teaspoon garlic powder
½ teaspoon ground ginger
Salt and pepper, to taste
Optional: sesame seeds or green onion for garnish
Directions
- Heat oil in a large skillet over medium-high heat.
- Add sliced chicken, season with salt, pepper, garlic powder, and ginger. Cook 4–6 minutes until browned and cooked through.
- Push chicken to the side. Add frozen stir-fry veggies and cook for 5–7 minutes until tender.
- Stir everything together and pour in coconut aminos. Cook another 1–2 minutes.
- Serve hot, garnished with sesame seeds or green onions if desired.
