Ingredients

  • 1 lb boneless, skinless chicken breast, sliced thin

  • 1 tablespoon olive oil or avocado oil

  • 3 cups frozen stir-fry vegetable mix (no carrots or corn)

  • 2 tablespoons coconut aminos or low-sodium soy sauce

  • 1 teaspoon garlic powder

  • ½ teaspoon ground ginger

  • Salt and pepper, to taste

  • Optional: sesame seeds or green onion for garnish

Directions

  • Heat oil in a large skillet over medium-high heat.
  • Add sliced chicken, season with salt, pepper, garlic powder, and ginger. Cook 4–6 minutes until browned and cooked through.
  • Push chicken to the side. Add frozen stir-fry veggies and cook for 5–7 minutes until tender.
  • Stir everything together and pour in coconut aminos. Cook another 1–2 minutes.
  • Serve hot, garnished with sesame seeds or green onions if desired.
