Falafel and Tabbouleh Grain Bowl

Ingredients
1 package falafel mix or 1 batch homemade falafel
1 cup quinoa or bulgur, cooked
1 cup cherry tomatoes, halved
1 cucumber, diced
1/4 cup parsley, chopped
1/4 cup mint, chopped
2 tablespoons lemon juice
2 tablespoons olive oil
Salt and pepper to taste
1/2 cup tahini
1/4 cup water
2 tablespoons lemon juice
1 garlic clove, minced
Directions
- Prepare falafel according to package instructions or your preferred recipe.
- For tabbouleh, mix cooked quinoa or bulgur, tomatoes, cucumber, parsley, and mint. Dress with lemon juice, olive oil, salt, and pepper.
- Whisk together tahini, water, lemon juice, and garlic to make the dressing.
- Arrange falafel on a bed of tabbouleh. Drizzle with tahini dressing before serving.
