Ingredients

  • 1 package falafel mix or 1 batch homemade falafel

  • 1 cup quinoa or bulgur, cooked

  • 1 cup cherry tomatoes, halved

  • 1 cucumber, diced

  • 1/4 cup parsley, chopped

  • 1/4 cup mint, chopped

  • 2 tablespoons lemon juice

  • 2 tablespoons olive oil

  • Salt and pepper to taste

  • 1/2 cup tahini

  • 1/4 cup water

  • 2 tablespoons lemon juice

  • 1 garlic clove, minced

Directions

  • Prepare falafel according to package instructions or your preferred recipe.
  • For tabbouleh, mix cooked quinoa or bulgur, tomatoes, cucumber, parsley, and mint. Dress with lemon juice, olive oil, salt, and pepper.
  • Whisk together tahini, water, lemon juice, and garlic to make the dressing.
  • Arrange falafel on a bed of tabbouleh. Drizzle with tahini dressing before serving.
