Blackened Cod Tacos with Pineapple Salsa

Ingredients:
- 1 lb cod fillets
- 1 tablespoon olive oil
- 1 tablespoon blackening seasoning (or Cajun seasoning)
- 1 cup diced pineapple
- 1/4 cup red onion, finely chopped
- 1 small jalapeño, minced
- Juice of 1/2 lime
- 2 tablespoons chopped cilantro
- 8 tortillas
Instructions:
- Rub cod with olive oil and seasoning.
- Cook in a hot skillet or grill pan for 3–4 minutes per side until flaky.
- In a bowl, mix pineapple, onion, jalapeño, lime juice, and cilantro for salsa.
- Warm tortillas and layer fish with spoonfuls of pineapple salsa.
Tip: Frozen cod works great—just thaw and pat dry before seasoning.
