Baked Salmon Tacos with Roasted Corn & Feta

Ingredients:
- 1 lb salmon fillet
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- Salt and pepper
- 1/2 cup corn kernels (roasted or canned)
- 1/4 cup crumbled feta
- 1 tablespoon lime juice
- 1/4 cup chopped cilantro
- 8 small tortillas
Instructions:
- Preheat oven to 400°F. Brush salmon with oil, garlic powder, salt, and pepper.
- Bake for 12–15 minutes or until cooked through. Flake with fork.
- In a bowl, mix corn, feta, lime juice, and cilantro.
- Fill tortillas with salmon and roasted corn topping.
Tip: Roasted frozen corn adds extra flavor—no grill required.
