Healthy Walleye Tacos with Greek Yogurt Slaw

Ingredients:
- 1 lb walleye fillets
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- Salt and pepper
- 2 cups cabbage slaw mix
- 1/3 cup plain Greek yogurt
- 1 tablespoon apple cider vinegar
- 1 teaspoon honey or maple syrup
- 8 tortillas
Instructions:
- Rub fish with oil, paprika, salt, and pepper. Cook in a skillet or bake at 400°F for 12 minutes.
- Mix slaw, yogurt, vinegar, and sweetener until combined.
- Warm tortillas and add fish and creamy slaw.
Tip: Great way to use frozen walleye fillets—just thaw and pat dry first.
