Ingredients
2 carrots, peeled and sliced
2 celery stalks, chopped
1 small onion, diced
3 garlic cloves, minced
1 zucchini, chopped
1 cup chopped cabbage
1 cup green beans, trimmed and cut into bite-sized pieces
1 can (14.5 oz) diced tomatoes, undrained
4 cups vegetable broth
1 teaspoon turmeric
1/2 teaspoon ground ginger
1/2 teaspoon black pepper
1/2 teaspoon salt (adjust to taste)
1 teaspoon Italian seasoning
1 bay leaf
Juice of 1/2 lemon
1/4 cup fresh parsley, chopped
Directions
- Add all ingredients except lemon juice and parsley to the slow cooker. Stir to combine.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the vegetables are tender.
- Remove the bay leaf and stir in the fresh lemon juice and parsley.
- Taste and adjust seasoning if needed.
- Serve warm and enjoy the wholesome goodness!
