Ingredients
1 ½ lbs ground beef or ground turkey
1 tbsp taco seasoning (sugar-free)
4 cups cauliflower rice
1 cup shredded cheddar cheese
1 avocado, diced
½ cup salsa (no sugar added)
¼ cup sour cream
¼ cup chopped fresh cilantro
Salt and pepper to taste
Directions
- Cook ground beef in a skillet over medium heat until browned. Drain fat, stir in taco seasoning, and cook for another 2–3 minutes.
- Warm the cauliflower rice in a separate pan or microwave and season lightly with salt.
- Assemble each bowl with a base of cauliflower rice, topped with seasoned beef, shredded cheese, avocado, salsa, and sour cream.
- Sprinkle with chopped cilantro and serve.
Notes
- Want extra crunch? Add chopped romaine or shredded lettuce to the base.
