Ingredients

  • 1 ½ lbs ground beef or ground turkey

  • 1 tbsp taco seasoning (sugar-free)

  • 4 cups cauliflower rice

  • 1 cup shredded cheddar cheese

  • 1 avocado, diced

  • ½ cup salsa (no sugar added)

  • ¼ cup sour cream

  • ¼ cup chopped fresh cilantro

  • Salt and pepper to taste

Directions

  • Cook ground beef in a skillet over medium heat until browned. Drain fat, stir in taco seasoning, and cook for another 2–3 minutes.
  • Warm the cauliflower rice in a separate pan or microwave and season lightly with salt.
  • Assemble each bowl with a base of cauliflower rice, topped with seasoned beef, shredded cheese, avocado, salsa, and sour cream.
  • Sprinkle with chopped cilantro and serve.

Notes

  • Want extra crunch? Add chopped romaine or shredded lettuce to the base.
