Ingredients

  • 1 ½ lbs thinly sliced beef (like sirloin or shaved steak)

  • 1 tbsp olive oil

  • 1 green bell pepper, sliced

  • 1 small onion, sliced

  • 1 cup shredded provolone or mozzarella cheese

  • 4 cups cauliflower rice

  • Salt and pepper to taste

Directions

  • Sauté peppers and onions in olive oil until softened. Remove and set aside.
  • Cook steak in the same pan until browned, seasoning with salt and pepper.
  • Return peppers and onions to the pan and mix.
  • Warm cauliflower rice and divide among 4 bowls. Top with steak mixture and shredded cheese.
  • Optional: microwave each bowl for 30–60 seconds to melt cheese on top.

Notes

  • Want it extra creamy? Add a dollop of cream cheese or cheese sauce to the pan before serving.
