Ingredients
1 ½ lbs thinly sliced beef (like sirloin or shaved steak)
1 tbsp olive oil
1 green bell pepper, sliced
1 small onion, sliced
1 cup shredded provolone or mozzarella cheese
4 cups cauliflower rice
Salt and pepper to taste
Directions
- Sauté peppers and onions in olive oil until softened. Remove and set aside.
- Cook steak in the same pan until browned, seasoning with salt and pepper.
- Return peppers and onions to the pan and mix.
- Warm cauliflower rice and divide among 4 bowls. Top with steak mixture and shredded cheese.
- Optional: microwave each bowl for 30–60 seconds to melt cheese on top.
Notes
- Want it extra creamy? Add a dollop of cream cheese or cheese sauce to the pan before serving.
