Ingredients
1 ½ lbs large shrimp, peeled and deveined
1 tbsp olive oil
1 tsp chili powder
½ tsp cumin
½ tsp paprika
1 red bell pepper, sliced
1 green bell pepper, sliced
½ red onion, sliced
4 cups cauliflower rice
Juice of 1 lime
2 tbsp chopped cilantro
Directions
- Toss shrimp with chili powder, cumin, paprika, salt, and pepper.
- Sauté shrimp in olive oil over medium-high heat until pink, 3–4 minutes. Remove and set aside.
- In the same pan, sauté peppers and onions until tender.
- Meanwhile, stir lime juice and cilantro into cooked cauliflower rice.
- Assemble bowls with cauli rice, veggies, and shrimp on top.
Notes
- Add avocado or a dollop of sour cream to make it more filling.
