Ingredients

  • 1 ½ lbs large shrimp, peeled and deveined

  • 1 tbsp olive oil

  • 1 tsp chili powder

  • ½ tsp cumin

  • ½ tsp paprika

  • 1 red bell pepper, sliced

  • 1 green bell pepper, sliced

  • ½ red onion, sliced

  • 4 cups cauliflower rice

  • Juice of 1 lime

  • 2 tbsp chopped cilantro

Directions

  • Toss shrimp with chili powder, cumin, paprika, salt, and pepper.
  • Sauté shrimp in olive oil over medium-high heat until pink, 3–4 minutes. Remove and set aside.
  • In the same pan, sauté peppers and onions until tender.
  • Meanwhile, stir lime juice and cilantro into cooked cauliflower rice.
  • Assemble bowls with cauli rice, veggies, and shrimp on top.

Notes

  • Add avocado or a dollop of sour cream to make it more filling.
