Lemon-Dill Salmon Cakes

Ingredients
1 can salmon, drained and flaked
1 egg
½ cup breadcrumbs
1 tbsp Dijon mustard
1 tbsp Greek yogurt (or mayo)
1 tbsp fresh dill, chopped
Zest & juice of 1 lemon
½ tsp salt & ½ tsp black pepper
1 tbsp olive oil (for frying)
Directions
- In a bowl, mix together salmon, egg, breadcrumbs, Dijon mustard, Greek yogurt, dill, lemon zest, lemon juice, salt, and pepper.
- Shape into 4 patties and let sit for 5 minutes.
- Heat olive oil in a pan over medium heat. Cook patties for 3-4 minutes per side until golden.
- Serve warm with extra lemon wedges.
Notes
- Serve with Greek yogurt lemon-dill sauce and a side of steamed asparagus or quinoa salad.
