Ingredients
2 chicken breasts
Juice of 1 lemon
2 tablespoons olive oil
1 tablespoon dried oregano
1 cup couscous, cooked
1 cup cherry tomatoes, halved
1 cucumber, diced
Salt and pepper to taste
Directions
- Marinate chicken breasts in lemon juice, olive oil, oregano, salt, and pepper for at least 30 minutes.
- Grill the chicken until fully cooked and juicy. Let rest before slicing.
- Arrange cooked couscous in bowls, and top with grilled chicken slices, cherry tomatoes, and cucumber.
- Season with additional lemon juice if desired before serving.
