Loaded Bacon Cheeseburger Cauliflower Casserole

Ingredients
1 ½ lbs ground beef
1 cup cooked, chopped bacon
3 cups cauliflower florets or riced cauliflower
¾ cup mayonnaise or sour cream
2 cups shredded cheddar
Optional: chopped dill pickles or green onions
Directions
- Preheat oven to 375°F.
- In a skillet, cook ground beef and bacon. Drain excess fat if needed.
- Stir in cauliflower and mayo (or sour cream). Season with salt and pepper.
- Spread into a greased 9×13-inch baking dish and top with cheese.
- Bake for 25–30 minutes, or until bubbly and golden on top.
- Add pickles or green onions if you like before serving.
