Loaded Bacon Cheeseburger Cauliflower Casserole

Ingredients

  • 1 ½ lbs ground beef

  • 1 cup cooked, chopped bacon

  • 3 cups cauliflower florets or riced cauliflower

  • ¾ cup mayonnaise or sour cream

  • 2 cups shredded cheddar

  • Optional: chopped dill pickles or green onions

Directions

  • Preheat oven to 375°F.
  • In a skillet, cook ground beef and bacon. Drain excess fat if needed.
  • Stir in cauliflower and mayo (or sour cream). Season with salt and pepper.
  • Spread into a greased 9×13-inch baking dish and top with cheese.
  • Bake for 25–30 minutes, or until bubbly and golden on top.
  • Add pickles or green onions if you like before serving.
