Ingredients

  • 1 ½ lbs cooked chicken (grilled, shredded, or rotisserie)

  • ½ cup sugar-free BBQ sauce

  • 4 cups mashed or riced cauliflower

  • ½ cup shredded cheddar cheese

  • 4 slices cooked bacon, crumbled

  • 2 green onions, sliced

Directions

  • Warm the cooked chicken and toss with BBQ sauce in a skillet or saucepan.
  • Prepare cauliflower mash or rice and divide among 4 bowls.
  • Top each bowl with saucy chicken, cheddar cheese, crumbled bacon, and green onions.

Notes

  • Microwave each bowl briefly to melt the cheese before serving if desired.
