Ingredients
1 ½ lbs cooked chicken (grilled, shredded, or rotisserie)
½ cup sugar-free BBQ sauce
4 cups mashed or riced cauliflower
½ cup shredded cheddar cheese
4 slices cooked bacon, crumbled
2 green onions, sliced
Directions
- Warm the cooked chicken and toss with BBQ sauce in a skillet or saucepan.
- Prepare cauliflower mash or rice and divide among 4 bowls.
- Top each bowl with saucy chicken, cheddar cheese, crumbled bacon, and green onions.
Notes
- Microwave each bowl briefly to melt the cheese before serving if desired.
