Ingredients

  • 1 lb 90% lean ground beef

  • 1 teaspoon olive oil

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 8 oz mushrooms, sliced

  • 1 tablespoon flour

  • 1 cup low-sodium beef broth

  • 1 tablespoon Worcestershire sauce

  • ½ teaspoon paprika

  • ½ cup plain nonfat Greek yogurt

  • Salt and pepper to taste

  • Cooked whole wheat noodles or zucchini noodles

  • Parsley, for garnish

Directions

  • In a large skillet, heat oil and cook ground beef until browned. Drain excess fat.
  • Add onion and garlic, cook until softened, about 4 minutes.
  • Add mushrooms and cook until browned.
  • Stir in flour and cook for 1 minute.
  • Pour in broth, Worcestershire, and paprika. Simmer 5–6 minutes.
  • Remove from heat and stir in Greek yogurt. Season to taste.
  • Serve over whole wheat noodles or zoodles, garnish with parsley.
