Low-Calorie Beef Stroganoff

Ingredients
1 lb 90% lean ground beef
1 teaspoon olive oil
1 small onion, diced
2 cloves garlic, minced
8 oz mushrooms, sliced
1 tablespoon flour
1 cup low-sodium beef broth
1 tablespoon Worcestershire sauce
½ teaspoon paprika
½ cup plain nonfat Greek yogurt
Salt and pepper to taste
Cooked whole wheat noodles or zucchini noodles
Parsley, for garnish
Directions
- In a large skillet, heat oil and cook ground beef until browned. Drain excess fat.
- Add onion and garlic, cook until softened, about 4 minutes.
- Add mushrooms and cook until browned.
- Stir in flour and cook for 1 minute.
- Pour in broth, Worcestershire, and paprika. Simmer 5–6 minutes.
- Remove from heat and stir in Greek yogurt. Season to taste.
- Serve over whole wheat noodles or zoodles, garnish with parsley.
