Ingredients

  • 1 lb beef sirloin, sliced into thin strips

  • 2 tbsp butter

  • 1/2 medium onion, sliced

  • 2 cloves garlic, minced

  • 8 oz mushrooms, sliced

  • 1/2 cup beef broth

  • 1/2 cup sour cream

  • Salt and pepper, to taste

  • 1 head cauliflower, steamed and mashed with 1 tbsp butter and salt

Directions

  • Heat butter in a skillet over medium heat. Add onions and cook until soft.
  • Add garlic and mushrooms; cook until browned.
  • Add beef and sauté until just cooked through.
  • Stir in beef broth and simmer 5 minutes. Remove from heat and stir in sour cream.
  • Serve over cauliflower mash.
  • Tip: Don’t boil sour cream—add it off heat to prevent curdling.
