Ingredients
2 cups cooked chicken, shredded
1 cup cream cheese, softened
1/2 cup sour cream
1 cup shredded cheddar cheese (divided)
1 cup bell peppers, sliced (use a mix of red and yellow for color)
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 teaspoon chili powder
1 teaspoon cumin
Salt and pepper to taste
Fresh cilantro, chopped (for garnish)
Directions
- Preheat Oven: Set your oven to 350°F (175°C). Grease a baking dish lightly to prevent sticking.
- Combine Ingredients: In a large bowl, mix together the shredded chicken, cream cheese, sour cream, half of the cheddar cheese, sliced bell peppers, garlic powder, onion powder, chili powder, cumin, salt, and pepper until well incorporated.
- Assemble the Casserole: Pour the mixture into the prepared baking dish, spreading it evenly across the bottom. Top with the remaining cheddar cheese for a gooey, golden crust.
- Bake: Place the dish in the oven and bake for 25-30 minutes, or until the cheese is bubbly and golden brown.
- Garnish and Serve: Allow the casserole to cool slightly before garnishing with fresh chopped cilantro. Serve warm and enjoy as a standalone dish or alongside a simple salad.
