Mediterranean-Style Salmon Patties

Ingredients
1 can salmon, drained and flaked
1 egg
½ cup breadcrumbs (or almond flour for gluten-free)
¼ cup crumbled feta cheese
2 tbsp chopped sun-dried tomatoes
2 tbsp fresh parsley, chopped
1 tbsp fresh dill, chopped
½ small red onion, finely diced
1 tbsp olive oil (for frying)
Directions
- In a bowl, combine salmon, egg, breadcrumbs, feta, sun-dried tomatoes, parsley, dill, and red onion.
- Mix until well incorporated, then shape into 4 patties.
- Heat olive oil in a pan over medium heat. Cook patties for 3-4 minutes per side until golden brown.
- Serve immediately with a fresh squeeze of lemon.
Notes
- Serve with tzatziki sauce and a side of Greek salad or roasted vegetables.
