Mediterranean-Style Salmon Patties

Ingredients

  • 1 can salmon, drained and flaked

  • 1 egg

  • ½ cup breadcrumbs (or almond flour for gluten-free)

  • ¼ cup crumbled feta cheese

  • 2 tbsp chopped sun-dried tomatoes

  • 2 tbsp fresh parsley, chopped

  • 1 tbsp fresh dill, chopped

  • ½ small red onion, finely diced

  • 1 tbsp olive oil (for frying)

Directions

  • In a bowl, combine salmon, egg, breadcrumbs, feta, sun-dried tomatoes, parsley, dill, and red onion.
  • Mix until well incorporated, then shape into 4 patties.
  • Heat olive oil in a pan over medium heat. Cook patties for 3-4 minutes per side until golden brown.
  • Serve immediately with a fresh squeeze of lemon.

Notes

  • Serve with tzatziki sauce and a side of Greek salad or roasted vegetables.
