Balsamic Glazed Salmon with Roasted Cherry Tomatoes

Sweet and tangy balsamic pairs beautifully with rich salmon and juicy roasted tomatoes. It looks elegant but couldn’t be easier.
Ingredients:
- 4 salmon fillets
- ¼ cup balsamic glaze or reduction
- 1 cup cherry tomatoes
- 1 tablespoon olive oil
- Salt and pepper, to taste
- Fresh basil, optional
Instructions:
- Preheat oven to 400°F.
- Toss tomatoes with olive oil, salt, and pepper. Spread on a baking sheet.
- Place salmon fillets beside or in between the tomatoes. Brush with balsamic glaze.
- Bake for 15–18 minutes. Garnish with fresh basil if desired.
