Sheet Pan Lemon Herb Salmon & Veggies

Dinner and sides—done in one pan. This light, bright recipe is packed with lemony flavor and doesn’t require a single extra dish.
Ingredients:
- 4 salmon fillets
- 1 zucchini, sliced
- 1 bell pepper, sliced
- 1 red onion, sliced
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon dried Italian herbs
- Salt and pepper, to taste
- Lemon slices
Instructions:
- Bake for 15–18 minutes, until salmon is cooked and veggies are tender.
- Toss veggies with olive oil, lemon juice, herbs, salt, and pepper. Spread on a large baking sheet.
- Nestle salmon fillets among the veggies and top with lemon slices.
- Preheat oven to 400°F.
