Pesto Crusted Salmon Bake

Herby, savory, and a little crispy on top, this recipe makes a great weeknight dinner when you’ve got leftover pesto in the fridge.
Ingredients:
- 4 salmon fillets
- ⅓ cup basil pesto
- ¼ cup panko breadcrumbs
- 2 tablespoons grated Parmesan cheese
- Olive oil spray or drizzle
Instructions:
- Preheat oven to 400°F.
- Place salmon on a baking sheet lined with parchment.
- Spread pesto over each fillet. In a small bowl, mix panko and Parmesan. Sprinkle on top of the pesto.
- Lightly spray or drizzle with olive oil.
- Bake for 12–14 minutes until the topping is golden and the salmon flakes easily.
