Ingredients

  • 6 slices sandwich bread

  • 3 tbsp peanut butter

  • 3 tbsp jelly or jam

  • 2 eggs

  • ¼ cup milk

  • 1 tsp vanilla extract

  • 1 tbsp butter

  • 2 tbsp cinnamon sugar (optional)

Directions

  • Flatten each bread slice with a rolling pin.
  • Spread peanut butter on one side and jelly on the other. Roll up tightly.
  • In a bowl, whisk eggs, milk, and vanilla.
  • Heat butter in a skillet over medium heat.
  • Dip each roll-up in the egg mixture and cook in the skillet, turning until golden brown.
  • Sprinkle with cinnamon sugar (optional) and serve warm.
