Fennel isn’t a vegetable you see often at Thanksgiving, which makes this gratin feel unique. The mild anise flavor pairs beautifully with apples in a creamy sauce. It’s lighter than potato gratin but just as cozy.

Ingredients

  • 2 fennel bulbs, thinly sliced

  • 2 apples, thinly sliced

  • 1 tbsp olive oil

  • 1 cup non-dairy or regular cream

  • 1/2 cup breadcrumbs

  • 1/4 cup parmesan or nutritional yeast

  • Salt and pepper to taste

Directions

  • Preheat oven to 375°F. Grease a baking dish.
  • Layer fennel and apples in the dish, drizzle with olive oil, and season.
  • Pour cream over the top, then sprinkle with breadcrumbs and parmesan.
  • Bake 30–35 minutes until golden and bubbly.
