Ingredients

  • 1 can salmon, drained and flaked

  • 1 egg

  • ½ cup breadcrumbs

  • 1 tbsp Dijon mustard

  • 1 tbsp Greek yogurt (or mayo)

  • 1 tbsp fresh dill, chopped

  • Zest & juice of 1 lemon

  • ½ tsp salt & ½ tsp black pepper

  • 1 tbsp olive oil (for frying)

Directions

  • In a bowl, mix together salmon, egg, breadcrumbs, Dijon mustard, Greek yogurt, dill, lemon zest, lemon juice, salt, and pepper.
  • Shape into 4 patties and let sit for 5 minutes.
  • Heat olive oil in a pan over medium heat. Cook patties for 3-4 minutes per side until golden.
  • Serve warm with extra lemon wedges.

Notes

  • Serve with Greek yogurt lemon-dill sauce and a side of steamed asparagus or quinoa salad.
