Ingredients

  • 2 lbs boneless, skinless chicken breasts

  • 1/2 cup plain Greek yogurt

  • 2 tablespoons olive oil

  • 1 tablespoon lemon juice

  • 1 tablespoon red wine vinegar

  • 3 cloves garlic, minced

  • 1 tablespoon dried oregano

  • 1/2 teaspoon salt

  • Cooked rice or quinoa, for serving

  • Toppings: cucumber, tomato, feta, kalamata olives, tzatziki sauce

Directions

  • Whisk yogurt, olive oil, lemon juice, vinegar, garlic, oregano, and salt. Pour over chicken in slow cooker.
  • Cook on low for 6 hours or high for 3–4 hours.
  • Slice or shred chicken and serve over rice with toppings.
