Slow Cooker Chicken Gyro Bowls

Ingredients
2 lbs boneless, skinless chicken breasts
1/2 cup plain Greek yogurt
2 tablespoons olive oil
1 tablespoon lemon juice
1 tablespoon red wine vinegar
3 cloves garlic, minced
1 tablespoon dried oregano
1/2 teaspoon salt
Cooked rice or quinoa, for serving
Toppings: cucumber, tomato, feta, kalamata olives, tzatziki sauce
Directions
- Whisk yogurt, olive oil, lemon juice, vinegar, garlic, oregano, and salt. Pour over chicken in slow cooker.
- Cook on low for 6 hours or high for 3–4 hours.
- Slice or shred chicken and serve over rice with toppings.
