Ingredients

  • 3 -4 lb corned beef brisket (with seasoning packet)

  • 4 cups beef broth

  • 1 onion, quartered

  • 3 cloves garlic, minced

  • 1 tbsp Dijon mustard

  • 1 lb baby potatoes, halved

  • 3 large carrots, chopped

  • 1 small head cabbage, cut into wedges

Directions

  • Place the onion, garlic, and carrots at the bottom of the slow cooker. Add the corned beef, seasoning packet, mustard, and broth.
  • Cook on low for 8-10 hours (or high for 4-5 hours).
  • Add potatoes and cabbage in the last 2 hours of cooking.
  • Slice the corned beef against the grain and serve with veggies.
