Slow Cooker Classic Corned Beef & Cabbage

Ingredients
3 -4 lb corned beef brisket (with seasoning packet)
4 cups beef broth
1 onion, quartered
3 cloves garlic, minced
1 tbsp Dijon mustard
1 lb baby potatoes, halved
3 large carrots, chopped
1 small head cabbage, cut into wedges
Directions
- Place the onion, garlic, and carrots at the bottom of the slow cooker. Add the corned beef, seasoning packet, mustard, and broth.
- Cook on low for 8-10 hours (or high for 4-5 hours).
- Add potatoes and cabbage in the last 2 hours of cooking.
- Slice the corned beef against the grain and serve with veggies.
