1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1 tablespoon olive oil
1 small onion, diced
3 cloves garlic, minced
8 ounces cremini or button mushrooms, sliced
1 can (10.5 ounces) cream of mushroom soup
1/2 cup chicken broth
1/2 cup heavy cream
1 teaspoon Dijon mustard
1 teaspoon Worcestershire sauce
1/2 teaspoon dried thyme
1/2 teaspoon paprika
Directions
- Season the pork chops with salt, pepper, and garlic powder.
- In a large skillet over medium-high heat, heat the olive oil and sear the pork chops for about 2 minutes per side until golden brown. Transfer them to the slow cooker.
- In the same skillet, sauté the onion and garlic for 2 minutes until softened. Add the mushrooms and cook for another 3 minutes. Transfer everything to the slow cooker.
- In a bowl, mix the cream of mushroom soup, chicken broth, heavy cream, Dijon mustard, Worcestershire sauce, thyme, and paprika. Pour this over the pork chops and mushrooms.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the pork chops are tender.
- Serve warm over mashed potatoes, rice, or egg noodles, spooning extra sauce over the top.
