Ingredients
2 lbs salmon fillet, skin on
1 lemon, thinly sliced
2 tbsp fresh dill, chopped (or 2 tsp dried)
2 tbsp unsalted butter, melted
1/2 cup vegetable or chicken broth
2 cloves garlic, minced
1/2 tsp salt
1/4 tsp black pepper
Directions
- Lightly grease the bottom of your slow cooker with cooking spray or a drizzle of olive oil.
- Pour the broth into the slow cooker and layer half of the lemon slices on the bottom.
- Place the salmon fillet on top, skin side down.
- Drizzle the melted butter over the salmon, then sprinkle with salt, pepper, garlic, and dill.
- Layer the remaining lemon slices on top of the salmon.
- Cover and cook on LOW for 1.5 to 2 hours, or until the salmon is opaque and flakes easily with a fork.
- Carefully remove the salmon using a large spatula, discarding the lemon slices on top. Serve warm with your favorite sides.
