Slow Cooker Lemon Herb Chicken with Potatoes & Green Beans

Ingredients
2 boneless, skinless chicken breasts
1 lb baby potatoes, halved
1/2 lb green beans, trimmed
Juice of 1 lemon + zest
3 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon dried oregano
1/2 teaspoon thyme
Salt and pepper, to taste
Directions
- Place potatoes in the bottom of the slow cooker. Layer chicken on top.
- In a small bowl, mix lemon juice, zest, garlic, olive oil, oregano, thyme, salt, and pepper. Pour over chicken.
- Cook on low for 6 hours or high for 3–4 hours.
- Add green beans during the last hour of cooking.
- Serve with extra lemon wedges if desired.
