Ingredients

  • 2 boneless, skinless chicken breasts

  • 1 lb baby potatoes, halved

  • 1/2 lb green beans, trimmed

  • Juice of 1 lemon + zest

  • 3 cloves garlic, minced

  • 2 tablespoons olive oil

  • 1 teaspoon dried oregano

  • 1/2 teaspoon thyme

  • Salt and pepper, to taste

Directions

  • Place potatoes in the bottom of the slow cooker. Layer chicken on top.
  • In a small bowl, mix lemon juice, zest, garlic, olive oil, oregano, thyme, salt, and pepper. Pour over chicken.
  • Cook on low for 6 hours or high for 3–4 hours.
  • Add green beans during the last hour of cooking.
  • Serve with extra lemon wedges if desired.
