Ingredients
1 ½ cups dried brown or green lentils, rinsed
1 medium onion, diced
2 carrots, peeled and chopped
2 celery stalks, chopped
3 cloves garlic, minced
1 can (14.5 oz) diced tomatoes, with juices
6 cups vegetable broth
1 teaspoon dried thyme
1 teaspoon ground cumin
½ teaspoon smoked paprika
½ teaspoon salt (or to taste)
¼ teaspoon black pepper
1 bay leaf
1 cup chopped fresh spinach or kale (optional)
1 tablespoon lemon juice
Directions
- Add the lentils, onion, carrots, celery, garlic, diced tomatoes, vegetable broth, thyme, cumin, smoked paprika, salt, pepper, and bay leaf to the slow cooker. Stir to combine.
- Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the lentils are tender.
- If using spinach or kale, stir it in during the last 10-15 minutes of cooking.
- Remove the bay leaf and stir in the lemon juice for a touch of brightness. Adjust seasoning if needed.
- Serve warm with crusty bread or over rice for a heartier meal.
