  • 1 ½ cups dried brown or green lentils, rinsed

  • 1 medium onion, diced

  • 2 carrots, peeled and chopped

  • 2 celery stalks, chopped

  • 3 cloves garlic, minced

  • 1 can (14.5 oz) diced tomatoes, with juices

  • 6 cups vegetable broth

  • 1 teaspoon dried thyme

  • 1 teaspoon ground cumin

  • ½ teaspoon smoked paprika

  • ½ teaspoon salt (or to taste)

  • ¼ teaspoon black pepper

  • 1 bay leaf

  • 1 cup chopped fresh spinach or kale (optional)

  • 1 tablespoon lemon juice

Directions

  • Add the lentils, onion, carrots, celery, garlic, diced tomatoes, vegetable broth, thyme, cumin, smoked paprika, salt, pepper, and bay leaf to the slow cooker. Stir to combine.
  • Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the lentils are tender.
  • If using spinach or kale, stir it in during the last 10-15 minutes of cooking.
