Ingredients
4 bone-in or boneless pork chops
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon paprika
½ teaspoon garlic powder
½ teaspoon onion powder
2 tablespoons olive oil (for searing)
1 medium onion, thinly sliced
2 cloves garlic, minced
1 can (10.5 oz) cream of mushroom or cream of chicken soup
1 cup chicken broth
1 tablespoon Worcestershire sauce
½ teaspoon dried thyme
½ teaspoon dried parsley
½ cup sour cream (optional, for extra creaminess)
Directions
- Season the pork chops on both sides with salt, pepper, paprika, garlic powder, and onion powder.
- In a large skillet over medium-high heat, heat the olive oil and sear the pork chops for 2 minutes per side until golden brown. (This step adds extra flavor but can be skipped if needed.)
- Transfer the pork chops to the slow cooker.
- In the same skillet, sauté the sliced onion for about 3 minutes until softened, then add the garlic and cook for 30 seconds more.
- In a bowl, mix the cream of mushroom soup, chicken broth, Worcestershire sauce, thyme, and parsley. Pour this mixture over the pork chops and onions in the slow cooker.
- Cover and cook on low for 6-7 hours or high for 3-4 hours, until the pork is tender.
- If desired, stir in sour cream in the last 15 minutes for a creamier gravy.
- Serve hot over mashed potatoes, rice, or egg noodles, spooning the rich gravy over everything.
