Slow Cooker Thai Peanut Chicken Lettuce Wraps

Ingredients
2 lbs boneless, skinless chicken breasts
1/2 cup natural peanut butter
1/4 cup soy sauce
2 tablespoons rice vinegar
1 tablespoon honey
2 cloves garlic, minced
1 teaspoon grated fresh ginger
1/2 teaspoon red pepper flakes (optional)
Butter lettuce or romaine leaves, for serving
Optional toppings: shredded carrots, chopped peanuts, cilantro, lime wedges
Directions
- Whisk peanut butter, soy sauce, rice vinegar, honey, garlic, ginger, and red pepper flakes in a bowl.
- Place chicken in slow cooker and pour sauce over top.
- Cook on low for 6 hours or high for 3–4 hours.
- Shred chicken and mix with sauce.
- Serve in lettuce cups with desired toppings.
