Ingredients

  • 2 lbs boneless, skinless chicken breasts

  • 1/2 cup natural peanut butter

  • 1/4 cup soy sauce

  • 2 tablespoons rice vinegar

  • 1 tablespoon honey

  • 2 cloves garlic, minced

  • 1 teaspoon grated fresh ginger

  • 1/2 teaspoon red pepper flakes (optional)

  • Butter lettuce or romaine leaves, for serving

  • Optional toppings: shredded carrots, chopped peanuts, cilantro, lime wedges

Directions

  • Whisk peanut butter, soy sauce, rice vinegar, honey, garlic, ginger, and red pepper flakes in a bowl.
  • Place chicken in slow cooker and pour sauce over top.
  • Cook on low for 6 hours or high for 3–4 hours.
  • Shred chicken and mix with sauce.
  • Serve in lettuce cups with desired toppings.
