Ingredients

  • 1 pound steak (such as flank or skirt), thinly sliced

  • 2 tablespoons lime juice

  • 2 tablespoons fajita seasoning

  • 1 tablespoon olive oil

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 onion, sliced

  • 2 cups cooked rice

  • 1/2 cup shredded cheese

  • Guacamole and sour cream for topping

Directions

  • Marinate steak slices in lime juice and fajita seasoning for at least 30 minutes.
  • Heat olive oil in a skillet over medium-high heat. Cook steak until desired doneness is achieved.
  • Remove steak and add bell peppers and onion to the same skillet, cooking until they are soft.
  • Serve steak and vegetables over rice, and sprinkle with cheese. Top with guacamole and sour cream if desired.
