Veggie Lover’s Tater Tot Casserole
Loaded with sautéed veggies in a creamy, cheesy sauce—comforting and colorful.

Ingredients
- 1 tablespoon olive oil
- 1½ cups chopped vegetables (zucchini, mushrooms, bell peppers)
- 1 can (10.5 oz) cream of mushroom soup
- ½ cup sour cream
- 1½ cups shredded cheese (Swiss or cheddar)
- 1 (28–32 oz) bag frozen tater tots
Instructions
- Preheat oven to 375°F.
- Sauté veggies in oil until soft.
- In a bowl, mix soup, sour cream, cheese, and sautéed veggies.
- Spread into greased 9×13 dish. Top with tater tots.
- Bake 40–45 minutes until bubbly and golden.
Tip: Add a pinch of thyme or Italian seasoning to boost the flavor.
