Mexican Tater Tot Casserole
Taco night meets tot night with seasoned beef, beans, and melty cheese.

Ingredients
- 1 pound ground beef
- 1 packet taco seasoning
- ½ cup water
- 1 can (15 oz) black beans, drained
- 1 cup corn (frozen or canned)
- 1½ cups shredded Mexican-blend cheese
- 1 (28–32 oz) bag frozen tater tots
- Optional toppings: sour cream, sliced green onions, chopped cilantro
Instructions
- Preheat oven to 375°F.
- Brown beef in a skillet, drain fat, then add taco seasoning and water. Simmer until thickened.
- Stir in beans and corn.
- Spread into a greased 9×13 pan and sprinkle with 1 cup cheese.
- Arrange tater tots on top and bake for 40 minutes.
- Add remaining ½ cup cheese and return to oven for 5–10 minutes.
- Serve with optional toppings.
Tip: Add a spoonful of salsa or enchilada sauce to the beef mix for more saucy goodness.
