Ingredients
1 pound ground beef
1 medium onion, chopped
1 can (10.5 oz) cream of mushroom soup
3/4 cup sour cream
1/4 cup beef broth
1 cup corn (frozen or canned)
1 cup shredded cheddar cheese
1 package (32 oz) frozen tater tots
1 teaspoon garlic powder
Salt and pepper to taste
Fresh parsley for garnish (optional)
Directions
- Preheat the oven to 350°F (175°C).
- In a skillet over medium heat, brown the ground beef and chopped onion until the meat is no longer pink. Drain any excess fat.
- Stir in the cream of mushroom soup, sour cream, beef broth, corn, garlic powder, salt, and pepper. Mix until well combined.
- Spread the beef mixture evenly in a greased 9×13 inch baking dish.
- Top with tater tots in a single layer, then sprinkle with shredded cheddar cheese.
- Bake for 25 minutes. Remove, foil and bake an additional 10-15 minutes or until the tater tots are golden brown and crispy.
- Cover baking dish with foil.
- Remove from the oven and let cool for a few minutes. Garnish with fresh parsley if desired. Serve warm.
