Ingredients

  • 1 pound ground beef

  • 1 medium onion, chopped

  • 1 can (10.5 oz) cream of mushroom soup

  • 3/4 cup sour cream

  • 1/4 cup beef broth

  • 1 cup corn (frozen or canned)

  • 1 cup shredded cheddar cheese

  • 1 package (32 oz) frozen tater tots

  • 1 teaspoon garlic powder

  • Salt and pepper to taste

  • Fresh parsley for garnish (optional)

Directions

  • Preheat the oven to 350°F (175°C).
  • In a skillet over medium heat, brown the ground beef and chopped onion until the meat is no longer pink. Drain any excess fat.
  • Stir in the cream of mushroom soup, sour cream, beef broth, corn, garlic powder, salt, and pepper. Mix until well combined.
  • Spread the beef mixture evenly in a greased 9×13 inch baking dish.
  • Top with tater tots in a single layer, then sprinkle with shredded cheddar cheese.
  • Bake for 25 minutes. Remove, foil and bake an additional 10-15 minutes or until the tater tots are golden brown and crispy.
  • Cover baking dish with foil.
  • Remove from the oven and let cool for a few minutes. Garnish with fresh parsley if desired. Serve warm.
