Breakfast Tater Tot Casserole
Perfect for brinner—savory sausage, eggs, and crispy tots all in one pan.

Ingredients
- 1 lb breakfast sausage
- 6 eggs
- 1 cup milk
- 1½ cups shredded cheddar cheese
- 1 (28–32 oz) bag frozen tater tots
- Salt & pepper to taste
Instructions
- Preheat oven to 375°F.
- Cook sausage and drain.
- In a bowl, whisk eggs, milk, salt, and pepper. Stir in cooked sausage and 1 cup cheese.
- Pour into greased 9×13 pan. Arrange tater tots on top.
- Bake for 40–45 minutes until eggs are set and tots are golden.
- Sprinkle remaining cheese and return to oven for 5 minutes.
Tip: Add chopped green onions or hot sauce on top to kick it up.
