Thai Peanut Chicken Noodle Bowl

Ingredients
2 chicken breasts, sliced thin
2 tablespoons soy sauce
8 ounces rice noodles
1 cup carrots, julienned
3/4 cup peanut butter
1 tablespoon lime juice
3 tablespoons soy sauce
1 tablespoon sugar
1/4 teaspoon red pepper flakes
1/2 cup water
Crushed peanuts and lime wedges, for garnish
Directions
- Cook rice noodles according to package instructions and set aside.
- In a skillet, cook chicken slices in soy sauce until done.
- For the sauce, combine peanut butter, lime juice, soy sauce, sugar, red pepper flakes, and water in a saucepan over low heat. Stir until smooth.
- Serve cooked noodles topped with chicken, carrots, and peanut sauce. Garnish with crushed peanuts and lime wedges.
