Ingredients

  • 1 1/2 lbs boneless, skinless chicken thighs

  • 1 tablespoon olive oil

  • 1 teaspoon chili powder

  • 1 teaspoon cumin

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon smoked paprika

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • Juice of 1 lime

  • 8 small flour or corn tortillas

  • 1 avocado, sliced

  • 1/4 cup chopped red onion

  • 1/4 cup chopped fresh cilantro

  • Lime wedges

Directions

  • In a small bowl, combine chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and pepper.
  • Pat chicken thighs dry and rub with olive oil and spice blend.
  • Heat a large skillet over medium-high heat. Cook chicken for 5–6 minutes per side, or until cooked through and slightly charred.
  • Remove from heat and let rest for 5 minutes. Slice or chop into bite-size pieces.
  • Warm tortillas in a dry skillet or microwave.
  • Fill each tortilla with chicken, avocado slices, chopped red onion, and fresh cilantro.
  • Squeeze fresh lime juice over the top before serving.

Notes

  • Use an indoor grill pan or outdoor grill for extra smoky flavor.
    Make it creamy by adding a drizzle of sour cream or Greek yogurt.
