Ingredients
1 1/2 lbs boneless, skinless chicken thighs
1 tablespoon olive oil
1 teaspoon chili powder
1 teaspoon cumin
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
Juice of 1 lime
8 small flour or corn tortillas
1 avocado, sliced
1/4 cup chopped red onion
1/4 cup chopped fresh cilantro
Lime wedges
Directions
- In a small bowl, combine chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and pepper.
- Pat chicken thighs dry and rub with olive oil and spice blend.
- Heat a large skillet over medium-high heat. Cook chicken for 5–6 minutes per side, or until cooked through and slightly charred.
- Remove from heat and let rest for 5 minutes. Slice or chop into bite-size pieces.
- Warm tortillas in a dry skillet or microwave.
- Fill each tortilla with chicken, avocado slices, chopped red onion, and fresh cilantro.
- Squeeze fresh lime juice over the top before serving.
Notes
- Use an indoor grill pan or outdoor grill for extra smoky flavor.
Make it creamy by adding a drizzle of sour cream or Greek yogurt.
