Ingredients

  • 1 cup brown rice, cooked

  • 1 can chickpeas, drained and rinsed

  • 2 cups assorted vegetables (e.g., sweet potatoes, broccoli, bell peppers), roasted

  • 1/4 cup tahini

  • 2 tablespoons lemon juice

  • 1 tablespoon maple syrup

  • Salt and pepper to taste

Directions

  • Roast your choice of vegetables until tender and slightly caramelized.
  • In a small bowl, whisk together tahini, lemon juice, maple syrup, salt, and pepper to make the dressing.
