Ingredients
1 cup fresh cilantro leaves
1/2 cup fresh parsley leaves
2 cloves garlic, minced
1 jalapeño pepper, seeded and chopped
2 tablespoons olive oil
1 tablespoon lemon juice
1/2 teaspoon ground cumin
1/4 teaspoon ground cardamom
Salt to taste
Directions
- In a food processor, combine the fresh cilantro leaves, fresh parsley leaves, minced garlic, and chopped jalapeño pepper.
- Add the olive oil, lemon juice, ground cumin, and ground cardamom.
- Blend until the mixture forms a smooth paste, adding a little water or olive oil if needed to reach the desired consistency.
- Season with salt to taste and blend again to incorporate.
- Transfer to a small bowl and let sit for 10 minutes to allow the flavors to meld.
- Drizzle over your prepared rice bowl and enjoy!
