  • 1 cup fresh cilantro leaves

  • 1/2 cup fresh parsley leaves

  • 2 cloves garlic, minced

  • 1 jalapeño pepper, seeded and chopped

  • 2 tablespoons olive oil

  • 1 tablespoon lemon juice

  • 1/2 teaspoon ground cumin

  • 1/4 teaspoon ground cardamom

  • Salt to taste

Directions

  • In a food processor, combine the fresh cilantro leaves, fresh parsley leaves, minced garlic, and chopped jalapeño pepper.
  • Add the olive oil, lemon juice, ground cumin, and ground cardamom.
  • Blend until the mixture forms a smooth paste, adding a little water or olive oil if needed to reach the desired consistency.
  • Season with salt to taste and blend again to incorporate.
  • Transfer to a small bowl and let sit for 10 minutes to allow the flavors to meld.
  • Drizzle over your prepared rice bowl and enjoy!
