Ingredients
2 cups cooked rice
1 can black beans, drained and rinsed
1 cup corn kernels, fresh or frozen
1 cup cherry tomatoes, halved
1 avocado, diced
Juice of 1 lime
Fresh cilantro for garnish
Salt and pepper to taste
Directions
- In a large bowl, mix black beans, corn, cherry tomatoes, and avocado.
- Season with lime juice, salt, and pepper.
- Serve this mixture over a bed of cooked rice.
- Garnish with fresh cilantro before enjoying.
